Our Heritage

A Century of Craft

Our story began over a century ago on the sun-drenched hills of central Greece, where our great-grandfather Alexandros first cultivated the olive groves that we still harvest today.

He believed that the perfect olive was a gift from the sun — a small vessel of flavour nurtured by the land and harvested with respect. This profound philosophy has guided every generation since.

Today at Helia Olives, we honour that legacy by blending age-old traditions with modern, sustainable practices to bring an authentic Grecian taste to kitchens in over 30 countries.

From Grove to Jar

Our Process

Quality is not one step — it is every step. Our nine-stage process is designed to protect the natural character of the olive from the moment it leaves the tree.

Grove Selection
01

Grove Selection

We work exclusively with groves that meet our exacting standards for soil composition, microclimate, and traditional cultivation practices.

Harvest with Care
02

Harvest with Care

Trained harvesters hand-pick or use gentle combing methods to avoid bruising. Harvest windows are monitored weekly for peak maturity.

Same-Day Reception
03

Same-Day Reception

Olives arrive at our facility within 24 hours of harvest in ventilated crates, preventing fermentation and preserving their fresh character.

Quality Testing
04

Quality Testing

Every batch undergoes rigorous laboratory analysis — pH, salt content, colour index, and microbiological screening — before advancement.

Natural Curing
05

Natural Curing

We use traditional brine curing with natural sea salt — no artificial accelerators. Curing periods range from 3 to 9 months depending on variety.

Selection & Grading
06

Selection & Grading

Post-curing, optical sorting machines and trained technicians remove defects and grade each batch by size, colour, and density.

Flavouring & Marinating
07

Flavouring & Marinating

Selected lines are enhanced with cold-pressed extra virgin olive oil, fresh herbs, and citrus using recipes perfected over three generations.

Packaging & Logistics
08

Packaging & Logistics

Automated filling lines ensure consistent fill weights and net brine ratios. Vacuum-sealed packaging locks in freshness at peak quality.

Retail Ready
09

Retail Ready

A sample from every production batch is held in our sensory lab for 30-day shelf-life verification before release to market.

Our Varieties

Three Terroirs. One Standard.

Each of our olive varieties is grown in a distinct microclimate, harvested at peak ripeness, and processed within 24 hours to preserve every nuance of flavour.

A bowl of naturally wrinkled Throuba olives from ThassosRare Delicacy

Island of Thassos, Aegean Sea

Thassos Island Throuba Olives

A truly unique olive — the Throuba is left to ripen and naturally cure directly on the tree, a practice unique to Thassos. The result is an intensely rich, concentrated savouriness with a distinctively wrinkled appearance and a moist, semi-dry texture that no other olive can replicate.
