Upon arrival, fresh olives are immediately brought to our reception area. Here, they undergo the first critical inspection. We use a combination of automated sorting technology and skilled hand-sorting to ensure only the finest, unblemished fruit moves on to the curing process.

Curing & Fermentation

Our olives develop their signature flavor in our temperature-controlled fermentation hall. Using traditional brine recipes passed down through generations, we allow the olives to cure naturally and slowly in our modern, food-grade tanks. This crucial, unhurried process removes all bitterness and cultivates their rich, complex taste.

Processing & Packaging

Processing & Packaging

Once cured, the olives are moved to our fully automated processing and packaging lines. Whether being pitted, stuffed, or jarred whole, every step is conducted in a sterile environment. Our high-speed lines ensure that olives are sealed quickly to lock in freshness and flavor.
